Ice Cream Tacos

Ingredients:

  • 10 Frozen waffles (Waffle cones optional)
  • 3 cups of vanilla ice cream 
  • ½ cup chocolate syrup 
  • 10 Maraschino cherries 
  • Whipped cream & sprinkles (nuts optional)

Instructions:

  1. Lay the frozen waffles flat on a cookie sheet and allow to thaw, around 10 mins. Form the waffles into a taco shape and fit together side-by-side in a 9 x 13 baking dish.
  2. Fill each taco with vanilla ice cream evenly before adding a drizzle of chocolate syrup then freeze until firm.
  3. Top each with whipped cream, sprinkles, and a cherry. Now keep frozen, and allow tacos to sit for 5 minutes before ready to serve.

Senior Joshua Schmahl and Junior Luke Raney

Pleasanton Eagles Tennis team went to regionals at Corpus Christi on April 27 through the 28. They played against Devine and beat them with a score of 4-6, 6-4, and 6-0. The team faced their next opponent in regionals and lost to Remond Field 6-7, and 5-7. 

Coach Schawb regarding the seniors, “I am always sad that seniors go. But they grow up and leave and I wish them nothing but the best for them and they’re going to do great things.” Following this Schwab explained, “I try to teach students to be good students and good person and it’s important to make and impact on people and I want them to try to respect everyone and fear no one.” Senior Blake Moos advises to the remaining team, “Just to stick with the sport and to give it their all and the most important thing is to just have fun.” He further explained, “Have a bit of knowledge of the game and to just know where to be at certain times.” Good job, Eagle Tennis. Pride! Pride! Eagle Pride! 

Cake Pops

Ingredients:

  • 1 (15.25 ounce) package yellow cake mix
  • 1 cup water
  • 3 eggs 
  • ½ cup vegetable oil
  • 1 (16 ounce) package prepared chocolate frosting
  • 18 lollipop sticks
  • 1 (14 ounce) bag chocolate candy melts
  • 1 (.75 ounce) tube decorating icing 
  1. Preheat the oven to 350 degrees fahrenheit. Grease a 9×13-inch baking dish.
  2. Beat cake mix, eggs, and oil in a bowl using an electric mixer on low speed for 30 seconds. Increase the speed to medium and beat for an additional  2 minutes. Pour batter into the prepared baking dish.
  3. Bake in a preheated oven, 28 to 33 minutes. Cool completely, at least 1 hour.
  4. Crumble cake into a large bowl. Stir frosting into cake crumbles until mixture is sticky but not too smooth. Chill in the refrigerator, at least 30 minutes.
  5. Roll cake mixture into 1 ½-inch balls and arrange on a baking sheet. Place 1 lollipop stick into each ball
  6. Melt about ¼ cup chocolate candy melts in a microwave-safe bowl for about 20 seconds in the microwave. Dip each cake pop in the melted chocolate. Repeat melting chocolate and dipping remaining cake pops. Decorate pops with decorating icing.

Surprise Cupcakes Sweet Treat

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoons fine salt
  • 2 large eggs, at room temperature
  • 1 ½ (12 tablespoons) unsalted butter, melted
  • 2 teaspoons pure vanilla extract
  • ½ cup milk
  • A bag of any kind of M&Ms
  • Your favorite frosting and sprinkles, as topping
  1. Preheat the oven to 350 degrees Fahrenheit and position a rack in the middle of the oven. Line one 12-cup standard muffin tin.
  2. Whisk the flour, baking powder and salt together in a medium bowl.
  3. In another medium bowl, beat the eggs and sugar with an electric mixer until light and foamy, about 2 minutes. While beating, gradually pour in the melted butter and then the vanilla extract.
  4. While mixing slowly, add half of the flour mixture. Then add all the milk, followed by the remaining flour mixture; take care not to over-mix the batter. Divide the batter evenly in the prepared muffin tin.
  5. Bake until the cake tester inserted into the center comes out clean,rotating the tin about halfway through baking time, 18 to 20 minutes for standard cupcakes. Cool the cupcakes in the tin on a rack for 10 minutes, then remove the tin and cool on the rack completely.
  6. To add the M&Ms to the cupcakes: Use a small paring knife to cut a circle in the top of each cupcake. Gently remove the section of each cupcake and reserve.
  7. Using a teaspoon, create a small cavity in the cupcake. Fill with 5 or 6 M&Ms. Then replace the cake circle to seal in the M&Ms. 
  8. Frost and decorate as desired.

One Team-One Goal

Lady Eagles honors our hero’s

On March 3rd, the JV Lady Eagles Softball Team had their first home game vs Lee Volunteers they went in with a strong beginning but the Volunteers won the game with a score of 14-9. Emery Gillespie said, “For us to get better as a team.” She also said, “Since I am a catcher, I want to get better at blocking balls.” She also said, “I don’t give up because I know we can win and can get better.” On March 6th, the JV Lady Eagles Softball Team went to Poteet High School. They fought hard but Poteet won the game with a score of 15-7. Coach Mireles said, “I try to teach girls to be better than they were the day before whether it was with school or athletics and just try to be a better person than you were the day before.” She also said, “I played since I was 5 and it was always a game that let me let go of the world and escape reality and so then it was a game that I love and I want to teach them to be a better women in the world and better people in the world and not just teach them the love of the game.” On March 10th, The Lady Softball Team went to Gonzales High School. Since the Apaches scored their runs due to numerous walks. The Apaches won 15-0. 

On February 18th, the Varsity Lady Eagles Softball team went to their first tournament of the season in Floresville. The Eagles fought a tough battle against NB Canyon with a 10-0 loss. In the second game they had the bases loaded in the last inning, and got to hit a line drive that was caught the end of the game with a 5-2 loss against. The second day of their tournament the Lady Eagles won against Marion with a score of 9-4. The second game of the day was a close one against Alamo heights with a score of 6-7. The last day of the tournament ended on a good note, as they went against Floresville and were determined to change mistakes and the team won the game with a score of 8-4. March 5th, Varsity Lady Eagles went to Poteet and worked hard together and pulled a win with a score of 19-11. On March 9th, the Lady Eagles barely lost to Gonzales, with the score ending as 8-10. On March 12th, the Lady Eagles went in strong and won against Carrizo Springs with a score of 16-1. On March 16th, the Lady Eagles went against a possible playoff contender, Crystal City, and won with a score of 15-1. March 19th, the Lady Eagles went against Brooks and won with a score of 15-0. Keep up the good work. Pride, pride.

Sweet Treat: Key Lime Cheesecake Bites

Ingredients

  • ½ cup of raw almonds 
  • 2 tablespoons melted coconut oil
  • ½ cup raw cashews, soaked in water overnight and drained
  • ⅓ cup full-fat coconut milk (well shaken)
  • 3-4 tablespoons of raw honey
  • 4 limes, juices and zested

Instructions

  1. Line a muffin tin with 6 cupcake liners and set aside.
  2. Place the almonds and melted coconut in a blender or a food processor and blend until the mixture is crumbly and sticks together when pinched between your fingers.
  3. Place one heaping tablespoon in each lined muffin cavity, and press the mixture down using the back of a spoon to make a mini ¨crust¨.
  4. Place the muffin tin in the freezer for 15-20 minutes, while you prepare the filling.
  5. In the food processor add the drained cashews, coconut milk, honey, and lime juice. Puree until smooth and transfer to a measuring cup.
  6. Remove the muffin tin from the freezer when the crust hardens a bit and pour the filling mixture over the crusts. Top with lime zest and place back in the freezer for at least 4-6 hours to harden.

Store in the freezer until ready to serve. Enjoy!

Pleasanton girls first meet at home field

 

February 10, was the start of the Pleasanton Eagles track season where the Pleasanton Eagles track team went against Juordanton, Hondo, and Dilly at the Pleasanton Track. The Pleasanton Eagles the Varsity team placed 1st in this track meet and JV placed 3rd.  For the girls discus the girls placed 4th and 5th by Genavieve Alvarado and Ariana Johnson for the JV and Sofia Aguilar placed 5th for Varsity. Sofia Aguilar said, ¨It is different for sure with covid but it is what it is. I also want to improve on how far I throw and improve my form. I want to make memories with my team and friends.¨ For shot put Genavieve placed 2nd for JV and Sofia Aguilar placed 3rd for Varsity. Genavieve said, ¨Things go pretty well with masks and trying to keep everyone safe and doing our events during covid. I also want a good season and get over 20 feet in the shot put. I also want to get along with her teammates and get to know them better and go to other track meets with other great throwers.¨ For the Varsity hurdles Jillian Barcomb placed 1st and Emily David placed 2nd for Varsity. Jillian Barcomb said, ¨It’s pretty normal for this season just with extra health precautions. To get faster in hurdles. To hopefully get past the district meet.¨ For the girls high jump Kara Hinojosa placed 3d and Victoria Castillo tied for 2nd for Varsity. Kara Hinojosa said, ¨It’s definitely challenging and it definitely feels different from what I’m used to. Just the P.R. for my mile time. The comparison for this season cause I´m new here and I want to see what they got.¨ For the girls pole vault McAda Rutherford had no height and she did not place for the JV. McAda Rutherford said, ¨I don’t feel like it’s not that different from what we usually do, just smaller teams. My goals for this season to show some improvement from the beginning of the season to the end of this season. I’m looking forward to actually having a season and COVID not shutting us down.¨

For the 2 mile Caitlin Hernandez placed 1st for JV and Kassidy Vickers placed 1st and Fe Vielma placed 3rd for Varsity. Caitlin Hernandez said, ¨I feel like everything is more empty and I feel more open and less likely to win. Just try my best and make a new PR. Just to be with my friends and having fun and seeing how much better I have gotten.

Sweet Treat

The time to celebrate Christmas is back. This treat is a sweet and salty mix that everyone will love to eat. Chocolate covered pretzels are a delicious and fun dessert to make.

Ingredients

  • 2 bags of chocolate chips (dark or milk chocolate)
  • 1 bag of pretzels (logs work and you can try different varieties of twist)
  • Chopped nuts, for garnish (optional)
  • Colored nonpareils, for garnish (optional)
  • Sprinkles, for garnish (optional)
  • Crushed cookies, for garnish (optional)

Directions

  1. Melt chocolate in a double boiler over medium heat on stove top.
  2. Using tongs, or fingers, quickly dip the pretzels in chocolate allowing the excess to run off.
  3. Placed dipped pretzels on wax paper lined cookie sheets.
  4. Sprinkle with chopped nuts, sprinkles or other toppings.
  5. Allow to harden. You may need to refrigerate.
  6. Once hardened, remove from sheets and store in a cool location, with wax paper between layers.
  7. Package pretzels in clear cellophane bags or a vase for festive gift giving!

Cross Country

On Monday, October 26, Varsity boys and girls, along with JV girls went to Segiun for the Cross Country District Meet, where Varsity Girls placed 1st for the second year in a row. Caitlyn Nieschwitz placed 2nd, Kassidy Vickers placed 3rd, Kara Hinojosa placed 7th, Kennedy Guajardo placed 11th, Mary Martinez placed 14th, Fe Vielma placed 15th, and Lindsey Klein placed 19th. JV Girls placed 1st with Jillian Barcomb placed 2nd, Raylin Castillo placed 3rd, Sofia Aguilar placed 5th, Itzel Perez placed 7th, Savannah Clark placed 9th, and Adriana Clark placed 11th. Varsity Boys were short-handed this District Meet with Wanish Tortes-McGinnis placing 10th, Xavier Rodriguez placing 15th, Jayden Ogg placing 24th, and Zander Zamora placing 25th. Varsity Girls and Wanish Tortes-McGinnis qualified for the Regional Cross Country Meet in Corpus Christi on November 10th.

On Tuesday, November 10, Varsity Girls and Wanish Tortes-McGinnis went to Corpus Christi for the Cross Country Regional Meet, where Varsity Girls placed 5th with Kassidy Vickers placing 7th, Caitlyn Nieschwitz placing 13th, Mary Martinez placing 40th, Lindsey Klein placing 42nd, Fe Vielma placing 47th, Kara Hinojosa placing 51st, and Kennedy Guajardo placing 64th. Wanish Tortes-McGinnis placed 59th out of 130 people. Kassidy Vickers will compete at the State Cross Country Meet in Round Rock on November 24th. Great job Cross Country Girls and Boys. Pride! Pride!
